So what are the benefits of packaging meat with paper?
- The ultimate advantage of using paper in the meat packaging process, especially when selling meat cuts to the end user, is that it helps with the curing process. It is good for meat to ‘breathe’, as the oxygen helps sustain enzymes that break down the meat and allow it to remain tender.
- Paper packaging also helps to absorb any liquid that seeps from the meat. It would never be good to hand meat over to a customer while it is dripping in blood. Paper will soak up the meat and leave it dry enough to get home and store in the fridge.
- Paper also keeps the meat moist. Just as much as it keeps everything dry for the customer, paper packaging for meat allows the meat to retain the blood and liquids that will make the meat juicy.
- Paper will also provide the blockage from light that meat requires. Light can lead to a colour change in the meat, and will also contribute to the growth of bacteria. Although a little bacteria is needed for the curing process, too much can cause rot.
- Paper is clean, and is manufactured with wood chips and very few additives (none of which actually contaminate the meat).
